Smoked Turkey Gumbo

We're rubbing turkey legs and thighs with cajun seasonings, then slow confiting them until they are impossibly tender. We'll add that confit turkey and a hefty few handfuls of local greens to a smoky gumbo base, built on a foundation of sauteed celery, onion and bell pepper, juicy tomato, smoked celery salt, bay, and a house blend of not-so-traditional gumbo spices that we thinks really sets this apart. 24 ounces serves 3-4. Have a pot of rice at the ready.
