This is one of my favorite salads. It’s great as is but easily made into a hearty meal when served over greens with grilled chicken, fried bacon, or canned tuna on top. Throw in a hard cooked egg and you might as well be in Paris. Tender new potatoes, lightly steamed green beans, capers, parsley, and a little red onion, tossed in a creamy mustard vinaigrette. One pint serves 3-4 as a side.
