Chicken Enchiladas with Salsa Verde

Tender shredded chicken breast tossed with toasted spices, lots of cheese, a very little scallion, and all rolled up in corn tortillas. Topped with more cheese and a roasted tomatillo green chile salsa verde, made with a little cilantro and a squeeze of lime. Not too spicy. Kid pleasing. Serves 4.
