Bok Choy and Toasted Ramen Salad

Tender bok choy, a little cabbage and a very little kale, all marinated with sliced scallions, toasted sesame, and a sweet soy vinaigrette and tossed with toasted almonds and crushed ramen noodles. Great on day one, better on day 3. One pint.
