Whole roasted Sugarhill Produce carrots, sugary sweet in all their glory. We build a big bowl with a base of fluffy quinoa, topped with whole roasted carrots tossed in a little fresh herb pesto, arugula, pickled onions, pickled radish, and crispy curried chickpeas. We send it with a lemon tahini dressing for tossing. Serves 2 as a proper meal, or more as a side.
