Leek and Aged White Cheddar Bread Pudding

Gently sauteed leeks and lots of Cabot extra sharp white cheddar mixed in with our local egg quiche filling and chunks of our country sourdough. We soak it all overnight before baking for a custardy, savory pudding that makes a gorgeous breakfast, an easy lunch, or a special side for dinner. A versatile, hearty, country 'French' dish that will please on all fronts.
