German Potato Salad

Slow roasted red skin potatoes, seasoned with sea salt, pepper, and bacon drippings. That's right, this is not vegetarian, but it is exceedingly delicious. We toss the potatoes in a light dijon vinaigrette, and freshen things up with chives, parsley, and thinly sliced red onion. One pint serves 4 as a side, but is so delicious, you may want more for yourself.
